We discovered mangos when we were in Marathon, in the Florida Keys, last April; so today came the time to put together a salsa I found somewhere online, or in a book somewhere ... not sure.
The recipe calls for adding fresh mangos like the ones we purchased a couple days ago at a new Mexican restaurant in town, with the equally fresh tomatoes that are coming on in our pots. Other ingredients made took it "over the edge" in terms of taste and enjoyment.
4 medium red tomatoes, finely chopped
3 medium green tomatoes, finely chopped
1 medium red-onion, finely chopped
1 mango, finely chopped
1/4 - 1/2 cup cilantro, finely chopped
1 tsp, or 2, of fresh and crushed red pepper seeds
1/4, or 1/3, C of fresh orange juice
1, or 2, Tbsp of lime juice
salt to taste, a tsp, or 2
Mix all the ingredients and serve.
